Meet Jhon Carlos, a second generation coffee farmer that took over El Guayabo farm seven years ago from his father, who originally purchased the land thirty years prior. Jhon’s father, with an incredible amount of effort and fastidious hard work, laid the groundwork for his son to take over a humble, but successful legacy.

From a young age Jhon grew up experiencing his parents working the land, and learned how to value the countryside, hard work and more importantly, perseverance. He learned first hand how to cultivate coffee, how to love and tender it and thanks to that his passion for coffee was born… and flourished. With that learning, and the dream of supporting his parents, Jhon found further success with his own projects and began planting three hectares of coffee. Over the years since they have implemented regenerative and sustainable practises that care for their terroir, cultivating the soils, vastly improving water management and taking additional care in strengthening the production of higher-quality coffee beans.

Jhon’s dream is to grow El Guayabo even further, beginning with an additional hectare of coffee and in the longterm leaving an even stronger legacy for future generations.

With this Castillo variety, the coffee was left to ripen on the plant to select the ripest and best quality beans. After harvesting the beans were left for 24 hours in burlap sacks, ground and left to ferment in the processing plant for another 24 hours. It was then washed with water to be moved to dry.
