This lot comes exclusively from bourbon variety, grown on the slopes of the famous Ilamatepec Volcano in Santa Ana. Tablon refers to a section identified by El Borbollon that produces the best quality year on year. These cherries have then been wet fermented (Ethiopian style) prior to being shade dried on raised African beds.
Expect this coffee to be very sweet, with flavours of cherry, stone fruit, milk chocolate and hazelnut. Its been roasted for espresso but will work equally well on filter for those of you who prefer less acidity or milk with your coffee.
