Honey refers to the processing the coffee has gone through. The cherries have been pulped but 85% of the mucilage has been left on the parchment. This creates a sticky, honey like quality. The cherries have then been dried on raised beds slowly for 15 days.

Expect an extremely clean coffee with flavours of lemon and caramel. There is also a lingering dried fruit sweetness from the honey process.
