The classic Red Cat is back!

We have been buying this coffee from Diego for five years.
Its processed using Sonoras β€˜Black Honey’ process. This refers to a processing method which saves 80% of water over washed processing whilst also enriching the coffee with delicious sweetness.

First Sonora pick only fully ripe cherries, followed by a floating process, this is where they remove unripe beans.

They then pass the cherries through a pulper to remove the skin, crucially they keep the mucilage intact. The beans are then laid on the patios for five days, here the cherries begin to dry and look like honeycomb. They are then taken inside for five days to rest, followed by another five days back on the patios till they reach 10% humidity.

Expect a bright, light, complex espresso. Flavours of Lemon and Red Berries are balanced by creamy macadamia in the aftertaste.
