This is our first year working with the Castro Vindas family. We were introduced to Abraham, the youngest son of the family, by Diego Guardia of Hacienda Sonora. Each member of the family has specific roles, with Abraham overseeing the speciality microlots. This ‘red honey’ lot is processed by removing the skin from the coffee cherries but keeping 100% of the mucilage intact. This encourages more fermentation breaking down pectin and sugars to produce this very fruit-forward coffee.
